Job Description

The owner of The Brown Morel Restaurant, Shane Baguio, is currently seeking an experienced Sous Chef to join their team. This role will start immediately and considering the nature of our industry, this role will involve a variety of shifts & weekend work. The Sous Chef cover the Head Chef responsibilities when they are not present.

Requirements

ESSENTIAL:

  • Minimum Experience Required (Years) : 3 years’ experience in European cuisine. 2 years’ experience in Asian cuisine.

  • Minimum Qualification : Level 8 (incl Higher Diploma & Honours Bachelor Degree) OR Culinary

  • Additional Skills : Knowledge of food handling, storage and preparation techniques.

SKILLS REQUIRED:

  • Ability Skills : Catering, Communications, Creativity, Hospitality

  • Competency Skills : Flexibility, Initiative, Labouring, Time Management

  • 3 years’ experience in European cuisine.

  • 2 years’ experience in Asian cuisine

    Main duties and responsibilities will include:

  • Preparing & cooking food and while doing so, preventing cross contamination.

  • Specifications and exercising portion control is essential.

  • Having an excellent plating skills and food presentation.

  • Utilizing appropriate stock rotation, wastage procedures, portioning, storage and ordering techniques.

  • Placing orders with suppliers for food, beverages and commodities when required.

  • Checking deliveries when requested. Goods received must correspond with the order book and delivery note; Quality of produce; correct temperature.

  • Assisting in training of other staff.

  • Abiding by all the restaurant HACCP procedures and completing all HACCP documentation as required.
